Recipe: Our favourite Green Soup

Preparation time: 20 mins

(makes 2 servings)


1 red onion
1 carrot
2 sticks of celery
1 tablespoon of granulated organic vegetable stock (low sodium)
1 fennel bulb
1⁄2 white cabbage
200 g canned tomatoes
1 red pepper
200 g frozen peas
2 bay leaves
1 sprig of thyme
1 sprig of rosemary
2 tbsp olive oil
Sea salt
Black pepper


Finely dice onions, carrots and celery and sauté in a large pan with a little olive oil.

Cut the fennel and white cabbage into strips and place in the pot with the canned tomatoes, peas, paprika and the vegetable stock cube.

Add water until the vegetables are well covered with liquid. Add bay leaves and simmer for about 25 minutes.

Mix in thyme, rosemary, peas and paprika and leave to infuse for another 10 minutes.

Remove the rosemary, thyme and bay leaves and puree the soup completely or partially as desired with a hand blender.
